🍪 What is Sweet Paste Dough?

Sweet paste dough (also called pâte sucrée) is a soft, buttery dough perfect for cookies and tart shells. It holds its shape well and gives a crisp bite with a rich vanilla or chocolate flavor. For this recipe, we use two slabs — one vanilla and one chocolate — each rolled to 5mm thickness.

👩‍🍳 Method – How to Make Checkerboard Cookies

  1. Roll & Flatten Doughs
    Roll both the vanilla and chocolate sweet paste doughs into two separate rectangles, about 5mm thick each.
  2. Cut Strips
    Use a sharp knife or dough cutter to slice each slab into even strips about 1 cm wide.
  3. Assemble Checkerboard Pattern
    • On a flat surface, alternate the strips: one chocolate, one vanilla, one chocolate — like building blocks.
    • Then place a second layer on top, reversing the order: vanilla over chocolate, chocolate over vanilla.
    • Press gently to hold the strips together.
  4. Wrap and Chill
    Wrap the assembled dough block in cling wrap and refrigerate for 15–20 minutes. This helps the dough firm up for clean cutting.
  5. Slice into Cookies
    Cut the chilled dough block into 5mm thick cookie slices to reveal the checkerboard pattern.
  6. Bake
    Place cookies on a lined tray and bake at 170°C (340°F) for 10–12 minutes, or until the edges are just golden.
  7. Cool and Serve
    Let the cookies cool completely before serving. Enjoy your crisp, buttery checkerboard cookies!
